Eighty-two Monin lines for café, hotel and restaurant beverage programmes, in four families. Syrups, in 1 litre bottles and 6x1 litre cases: vanilla, hazelnut, caramel and salted caramel, toffee nut and salted pistachio; fruit and floral — strawberry, raspberry, peach, mango, watermelon, cherry, green apple, kiwi, coconut, lime, lemon, sun-dried orange, rose, lavender, cherry blossom, wild and green mint, blue lagoon, grenadine and Caribbean; and mixers — sweet and sour, cloudy lemonade, margarita mix, pure cane sugar and lemon Rantcho. Purées in 1L and 4x1L: passion fruit, lychee, yuzu, dates, pear, peach, coconut, green apple, banana, kiwi, blueberry, raspberry, strawberry and pineapple. Sauces in 1.89L: caramel, dark chocolate, white chocolate and pistachio. And Le Frappé bases in 1kg and 2kg: coffee, mocha, chocolate, vanilla, yogurt and matcha green tea.

Syrup, purée and sauce are not interchangeable, and ordering one for the other is the most common mistake on a beverage list. Syrup carries flavour and sugar into a drink and stays clear. Purée carries fruit pulp and body, which is what a smoothie or a mocktail needs and what a syrup cannot give it. Sauce is thick enough to hold its line on a cup wall or sit on a topping. Le Frappé bases are the powder side of the range — blended with ice and milk or water, they build the drink rather than flavour one.
